The juice comes exclusively from the first press. The base rape has flowed naturally thanks to gravity, with no pumping. We specially value this technique for the elaboration of our Champagnes. It allows to use very low quantities of sulfites (three times under standard vinification). *
This very «natural» vinification and the rare quality oak casks we use for part of the wines gives to our pinots a very beautiful copper-coloured aspect, close to last century's tradition.
Malolactic fermentation, non-filtered and non-discoloured wines.
Dosage liquor matured in oak casks (over 15 years).

Light bronze with gold tinges and small bubbles rising up in the glass.
Rich nose with appealing notes of candied apple and bakery but also some undertones of lavender honey.
The palate is round and concentrated with a creamy texture and a long caramelised quince aftertaste.
This Champagne of almost 20 years of age is showing well now but also demonstrates an exceptional capability of ageing.
